Beef Buddha Bowl
INGREDIENTS
- Grains: quinoa, barley, freekeh or brown rice
- vegetables: baby spinach, julienned carrots, shredded beetroot, picked red onion, roasted butternut pumpkin, tomatoes, capsicum, red cabbage, herbs, shredded zucchini, kale, cucumber
- Good fats: avocado, nuts, seeds, sesame or olive oil-based dressings
- Optional added protein: falafel, eggs, chickpeas, lentils, beans
METHOD
- Cook the bites or meatballs according to the instructions on the packet.
- Combine your choice of ingredients to a bowl separately.
- Garnish with fresh lime or lemon and herbs
