Breakfast Sausage Hash
INGREDIENTS
- 2 tbsp olive oil
- 3 large potatoes peeled and cubed
- 1/2 tsp salt or to taste
- 1/4 tsp pepper or to taste
- 1 small onion chopped
- 1/2 red bell pepper chopped
- 1/2 green bell pepper chopped
- 3 cloves garlic minced
- 1/4 tsp red pepper flakes
METHOD
- Add the olive oil to a large pan and heat over medium heat.
- Add the cubed potatoes, season with salt and pepper and cook for 7 to 10 minutes, until they're about halfway cooked through, stirring occasionally.
- Add the onion and cook for another 3 minutes, stirring occasionally.
- Add the patties, bell peppers, garlic and red pepper flakes to the pan and stir. Reduce the heat, and continue cooking until potatoes are cooked through, another 10 minutes.
- You can also cover the pan; this will cook the potatoes faster.
- Taste for seasoning and adjust with salt and pepper if needed. Serve with fried eggs.
