Breakfast Sausage Hash

INGREDIENTS

  • 2 tbsp olive oil
  • 3 large potatoes peeled and cubed
  • 1/2 tsp salt or to taste
  • 1/4 tsp pepper or to taste
  • 1 small onion chopped
  • 1/2 red bell pepper chopped
  • 1/2 green bell pepper chopped
  • 3 cloves garlic minced
  • 1/4 tsp red pepper flakes

METHOD

  1. Add the olive oil to a large pan and heat over medium heat.
  2. Add the cubed potatoes, season with salt and pepper and cook for 7 to 10 minutes, until they're about halfway cooked through, stirring occasionally.
  3. Add the onion and cook for another 3 minutes, stirring occasionally.
  4. Add the patties, bell peppers, garlic and red pepper flakes to the pan and stir. Reduce the heat, and continue cooking until potatoes are cooked through, another 10 minutes.
  5. You can also cover the pan; this will cook the potatoes faster.
  6. Taste for seasoning and adjust with salt and pepper if needed. Serve with fried eggs.
