INGREDIENTS

  • 1 packet of streaky bacon
  • 2 avocados
  • 1 lime squeezed
  • salt and pepper to season
  • 2 tbsp tomato relish (we suggest Barker's)
  • 2 C iceberg lettuce
  • 2 tomatoes sliced
  • 2 tbsp pickled red onion

METHOD

  1. Cook streaky bacon and patties according to the instructions on the packet.
  2. Prepare avocado smash with the juice of a lime and salt and pepper to season and set aside.
  3. Split and lightly toast the burger buns under the grill.
  4. Spread a generous layer of tomato relish, place lettuce, patty, tomato, avocado smash, bacon and pickled onion.
  5. Replace the bun's top and you're ready to serve.
  6. Serve with potato hashbrowns for breakfast or potato wedges for lunch or dinner.
