Lite Pita Pocket
INGREDIENTS
- 4 pita bread
- 1 cucumber
- ¾ C plain Greek yoghurt
- 2 cloves of garlic pressed or minced
- handful of mint
- pinch of salt and pepper
- 2 Cs of rocket
- 1 red onion sliced
- 12 cherry tomatoes sliced
- ½ C cooked rice
- fresh coriander
- 2 lemons
METHOD
- Prepare the tzatziki by grating ½ of the cucumber and placing in a paper towel to drain liquid.
- In a bowl add the drained, grated cucumber, yoghurt, garlic, chopped mint, salt, and pepper and mix well.
- Cover and refrigerate until ready to serve.
- Cook the patties according to the instructions on the pack.
- Warm pita breads and cut around the edge in a semi-circle so they open like a pocket.
- Dice remaining cucumber into small cubes.
- Place rocket, patty, red onion, cherry tomatoes, cucumber, rice, and coriander in the pita.
- Top with tzatziki and serve with a lemon on the side.
